That island life makes for hungry work, and in this week’s episode of Boss Bytes we can help sate both your appetite and your love of Animal Crossing: New Horizons. 

Below, we’ll take you through the recipes covered in our latest Boss Bytes video, helping you serve up some delicious Animal Crossing inspired food for your favorite villagers. Okay, your friends and family might not be quite as cool as Raymond, but they still deserve a quality meal every now and again. Best of all, we may even make you enjoy picking up some Sea Bass. This edition of Boss Bytes is split into three parts, teaching you how to prepare a dish of Sea Bass, Apple & Fennel slaw, and a Pear & Almond tartlet. Of course you can watch the video above to see the recipes in action, but we’ll take you through each of the Animal Crossing inspired recipes below, with ingredients and steps for each.

Pear and Almond Tartlet recipe

Ingredients
  • 2 cans (15 ¼-ounce) Pear Halves
  • 1 Pie Crust Dough (or make your own!)
  • 1 box of Almond Paste
  • ¼ cup Sugar
  • 1 Egg
  • 1 tbsp Heavy Cream
Method
  1. Start by preheating your oven to 425℉, a temperature usually used for anything with a crust.
  2. With your pear halves you won’t need to worry about shaking any fruit from your trees, but you should cut them into quarter-inch thick slices. Remember, slice don’t dice to keep that pear shape visible.
  3. Roll out your pie crust dough into a flat circle. Use a 6-inch cake-circle cutter, cut out two circles. If you can’t quite make two full circles, use any excess bits of dough to fill in the gaps. Use an egg wash made of the egg and heavy cream, lightly beaten, to help stick the excess pieces of dough into the circle.
  4. Roll out your almond paste until flat and roughly the same thickness as your dough. Use a 4-inch cake circle cutter to cut out a round for each of your dough circles. Place the almond paste circle in the center of each dough circle.
  5. Apply egg wash to the rim of the dough, outside the almond paste and pears. This will help it stick together as you fold it over. Pinch together the rim of the dough circle, then fold it over to the side. Repeat this all the way around the tartlets. After the final fold, gently push in on the folder regions to make sure everything is encased neatly inside.
  6. Brush the outsides of the dough folds in egg wash, then sprinkle a little sugar over the top of the tart.
  7. Place your two tartlets into a baking pan and bake for 20-25 minutes, or until golden brown on top. That should give you enough time to check in with all your villagers!

Apple & Fennel Shallot Slaw recipe

Ingredients
  • 1 Apple
  • 1 Fennel
  • 1 Shallot
  • 2 tsp Lemon Juice
  • 2 tsp Dijon Mustard
  • Black Pepper
  • Salt
  • 2 tsp Olive Oil
Method
  1. Cut off the non-root end of the Shallot. Peel back the outer layers using a paring knife. Slice the Shallot into rings, working your way down the length to the root (check the video for tips on how to do this without slicing those fingers!)
  2. Use a knife to cut the fennel stalks off from the bulb – you’ll want to save them for later though! Slice the bulb in half, lengthwise, then chop one half into thin slices. We’ll only be using one half of the bulb as fennel has a very strong flavor.
  3. Returning to our beloved Animal Crossing fruits, grab the apple and chop it in half, then into quarters. Core the apple quarters using a paring knife to remove those seeds. Cut the quarters into thin slices, then cut the slices into long, thin, matchstick-like strips (a Julienne cut - see the video again for more details). Take care to protect those fingers!
  4. Combine the shallot, fennel, and apple slices into a bowl. Add 2 tsp of lemon juice, 2tsp of Dijon mustard, and 2 tsp of olive oil, followed by a pinch of salt and black pepper. Mix the slaw together to coat the ingredients thoroughly. Using your hands here is a lot of fun and works well if you squeeze the strips – just make sure to wash those hands!

Sea Bass Fillets recipe

Ingredients
  • 2 Sea Bass Fillets
  • Salt
  • Pepper
  • Olive Oil
Method
  1. Check the sea bass fillets carefully to look for any leftover bones or scales. Kitchen tweezers can be used to remove any bones. Make sure to pull in the direction of the grain to avoid damaging the fish flesh. Trim scales by cutting through the softer flesh side to remove the area. One finished, season the skin side of the fillets with salt and pepper.
  2. Heat some olive oil in a medium-hot pan. Look for ripples in the surface of the oil as you move the pan around, this will tell you when it is hot enough. Once the pan is ready, add the fillets skin-side down. As they cook, season the flesh side with salt and pepper.
  3. Look at the edges of the fillets to see when the flesh begin to turn opaque. You can also check to see if the bottom has begun to brown by lifting gently. Once you spot this effect, flip the fillets over. Cook until the fish begins to flake at the edges and appears opaque throughout.
  4. To complete the dish, add the previously completed slaw to a plate as a bed, then place the sea bass on top, skin side up. Garnish with a few sprigs from the fennel stalks you kept earlier. Now that's a C+ at the very least!
